Ginger & White Chocolate Biscuits

Updated: Aug 24

I wanted to make my popular ginger biscuits recipe but change it slightly and I love the combination of ginger and white chocolate so this was an obvious choice.

You still get the strong ginger taste but with the sweetness of the white chocolate, they really are delicious!

They are exactly what you would imagine from a ginger biscuit - crunchy and a big hit of ginger! They passed the Husband taste test!!!!

Start by pre-heating the oven to 190 degrees centigrade (170 fan) then line two baking trays with baking parchment and set aside.

In a small pan put the butter, sugar and golden syrup and melt on a low heat until the sugar has dissolved.

In a medium sized bowl put the flour, bicarbonate of soda, ground ginger and mixed spice.

Add the butter/sugar mixture into the bowl and mix. The mixture will come away from the edges when fully incorporated.

Now add the white chocolate chips and mix again.

Divide the mixture into 10 balls (roughly 30g), slightly flatten and place on the prepared trays.

Bake for 10-12 minutes.

leave to cool on the trays until set then cool on a wire rack.
