Mini Christmas Tree Cupcakes

I initially made these cupcakes for the children at a family Christmas party and they went down extremely well so I thought I would share the recipe with you.

They are mini vanilla cupcakes topped with vanilla buttercream and decorated with Christmas sprinkles.

Pre-heat the oven to 180 degrees centigrade (160 fan) then line a mini cupcake tin with 24 mini cupcake cases. I used red ones but any festive colour would look good.



In the bowl of a stand mixer place the butter, sugar, eggs, flour, baking powder, milk and vanilla and mix until everything is combined and you can’t see any lumps of butter.



Divide the mixture between the mini cupcake cases.



Bake for 15-20 minutes.



Leave to cool.


To make the butter icing put the butter in the bowl of a stand mixer and with the whisk attachment mix until the butter is light and fluffy.


Add the icing sugar, vanilla and food colouring then whisk again into a smooth and fluffy buttercream. It should be soft enough to pipe and hold its shape. If it is too thick add a little milk and mix again.


Using a 1M piping nozzle pipe tree shapes into the top of each cake. Start piping the base of the tree to the size of the cupcake by holding the nozzle at the same height until it is wide enough then slowly raise the nozzle until you have the height required. You can practice your piping on a flat plate first then just scrape the icing back into the piping bag to use on your cakes.

Finally decorate with festive sprinkles and top each tree with a snowflake or star.

Cake 80g Butter or Stork Margarine

70g Caster sugar

2 Large Eggs

100g Self Raising Flour

1 tsp Baking powder

1 Tbsp Milk

1 tsp Vanilla extract

200g Sieved icing sugar

1 tsp Vanilla extract

Few drops of green food colouring

Festive sprinkles

Sarah’s extra slice……


I used a Wilton 1M piping nozzle.


The mini candy canes I used were also Wilton.


You can decorate the mini trees with any festive sprinkles you like.
