Plum and Almond Cake

We picked the last few plums off the tree in the garden and I was trying to decide what to make with them. I thought they would go well with almonds so decided on this light dairy free cake made in a Bundt cake tin with the plums arranged in the bottom so when you turn the cake out it looks very pretty and it’s tastes great too!!!

Pre-heat oven to 180 degrees centigrade (160 fan) or gas mark 4.



Grease the bundt tin (I used a Silverwood 9" Savarin Garland Ring Mould) then prepare the plums by removing the stones and cutting into slices.



Arrange the plums in the bottom of the prepared tin and set aside.



Whisk the sugar, eggs, oil and almond essence until light and fluffy.



Add flour, baking powder and ground almonds and fold until all the flour is combined.



Pour on top of the plums carefully so you don’t move them.


Bake in the oven for 40-45 minutes or until cake tester comes out clean.




Ingredients:


170g Caster Sugar

3 Large eggs

180ml Sunflower oil

1 tsp Almond essence

180g Self Raising Flour

1 tsp Baking powder

40g Ground almonds

8-10 Plums sliced

Sarah’s extra slice......

The tin I used was a Silverwood 9" Savarin Garland Ring Mould.

Make sure you spend the time getting the air into the oil and eggs before adding the flour so you have lovely light and fluffy loaves.


It is worth getting a decent almond essence so the taste is not too artificial.
