Red Tomato Spice Cake

This cake actually started as a bit of a joke with my husband. I decided to grow some San Marzano tomatoes from seed and we ended up with about 40 plants!!!! My husband suggested I made some tomato cakes to use some of them up and found an American recipe on the internet. I said it sounded disgusting and that if I made such a cake he would have to try it. Well yesterday we were making some pasta sauce with the tomatoes and I decided to call his bluff and make a cake using the tomatoes. The original recipe he found sounded very bland and high in sugar so I decided to make my own recipe and add some spices, dates and pecans to give some taste and texture. Expecting to try some and throw it in the bin I was extremely pleasantly surprised! My husband said “wow this is actually really good”!!!

Preheat the oven to 180 degrees centigrade (160 fan) and line and grease a 2lb loaf tin.



Put the sugar and butter in the bowl of a stand mixer and cream until smooth.



Add the eggs gradually until fully incorporated.

Then add the flour, baking powder, bicarbonate of soda, mixed spice and cinnamon and mix again.



Finally add the tomatoes, pecans, dates and sultanas and mix until fully incorporated.



Transfer into the prepared tin and level.



Bake in the preheated oven for 60-70 minutes or until a skewer comes out clean in the middle of the loaf.



Leave to cool before cutting into slices.

115g Soft unsalted butter

170g Soft dark brown sugar

2 Large eggs

480g Plain Flour

2 tsp Baking powder

1 tsp Bicarbonate of soda

325g Deseeded diced red tomatoes

75g Chopped pecan nuts

100g Chopped dates

85g Sultanas


Method:

Sarah’s extra slice……


You could use walnuts instead of pecans if you prefer.


Make sure the skewer comes out clean in the middle before taking out of the oven.

Can be enjoyed as it is or it is also nice buttered.
