With all the warm weather recently I wanted to make a dessert that was refreshing and not too sickly. So I decided on a classic lemon tart with a buttery pastry case filled with a tangy lemon filling. Jump to recipe To start make the pastry. Orange & Cranberry Shortbread
These shortbread biscuits are an old recipe that I used to make at Christmas for my coffee shop and it was so popular it became a regular on the menu all year round. They have fresh orange and dried cranberries in them so they are delicious over the festive season to keep in the biscuit barrel. These cookies are made as a log of dough then sliced and baked.
