Festive Mincemeat Tiffin

I wanted to make something for the festive season that didn’t need baking and as I love Chocolate Tiffin I decided to give it a festive twist and add mincemeat and cranberries to it.
This is something you can make quickly without having to put the oven on. It is made with digestive biscuits and this version is full of festive flavours.

It’s perfect with a cuppa when you just want to put your feet up after a busy day or I am sure Santa wouldn’t mind a slice on Christmas Eve. I also serve it on Boxing Day as a treat after a buffet lunch.
Line a 9” x 9” (23cm x 23cm) square tin with baking parchment.

Melt 200g of milk chocolate, butter, syrup and cocoa powder in a Bain Marie.

Place the digestives in a large bowl and crush with the end of a rolling pin. It should still have pieces of biscuit showing and not be finely crushed.

Add the mincemeat and cranberries to the biscuits.

Add the chocolate mixture and mix until combined.

Put into the prepared tin and level with a small spatula.

Melt the remaining 200g milk chocolate then pour over and level.


Place in the fridge to set then cut into slices to serve. Store in the fridge.

INGREDIENTS
400g milk cooking chocolate
150g unsalted butter, cubed
80g golden syrup
1 tbsp cocoa powder
400g digestive biscuits
200g mincemeat
100g dried cranberries

SARAH’S EXTRA SLICE
If you don’t have dried cranberries you can use some dried sultanas or raisins.
You can use dark cooking chocolate if you prefer.
Store in the fridge.
