Easter Simnel Cake
Simnel cake is a fruit cake usually eaten at Easter here in the UK. It typically has a layer of marzipan in the middle of the cake and on the top. Traditionally it is decorated with 11 marzipan balls on the top to represent Jesus's 11 disciples. You can decorate the top of the cake as you like, it doesn't have to be traditional. You can add any decorations you like and add some ribbon around the middle if you want to. I have lots of nice Easter cutters for animals and flower

Lemon & Blueberry Loaf Cake
A Lemon and blueberry loaf cake is something I have been wanting to make for a while! I wanted to make a cake where all the fruit didn't sink to the bottom as that would be a complete fail for me. I have had quite a few attempts at getting this recipe perfected and now I am happy as my fruit is evenly distributed!!! I know I am really fussy but I work hard to get my recipes perfect and I know my perfect is a high bar to reach but I wouldn't want anything less. This recipe is

Ginger & Satsuma Festive Cake
This is a really tasty cake for Christmas and is a great alternative if you don't like traditional Christmas cakes. It is a three layer ginger cake filled with homemade curd and ginger buttercream. I intended this to be a special cake for Christmas so I used my candied satsuma peel and made some gingerbread leaves and trees but you can decorate with anything you want. Crystallised ginger would look lovely too. If you are not confident with the icing then make 2/3 of the ici

Sticky Ginger Loaf Cake
In the 19th century ginger cake became very popular in British culture. Victorian bakers created ginger loaves creating a rich spiced cake. Historically the flavour comes from ground ginger, dark sugar and black treacle. My version has both ground ginger and stem ginger in it and is a really tasty ginger cake. If you keep the cake for a few days wrapped in parchment and foil the taste and texture will get even better!!! Gingerbread is perfect on a cold day with a cup of tea
