Fat Rascals
This is a recipe I have had on my “to-do” list for a while and as the weather was a bit cooler this week I decided to give it a go. Fat Rascals are a cross between a scone and a rock bun and are a great afternoon treat. They originate from Yorkshire and are also popular in the North East of England. Lemon Meringue Pie
I think this is one of my favourite desserts as I love the tart lemon topped with the really sweet meringue! I am not sure why it has taken me this long to put this recipe on my blog but I hope it is worth the wait! It has a crisp shortcrust pastry case filled with tart lemon curd and topped with a delicious crispy on the outside but soft in the middle meringue. Sarah’s Hummingbird Traybake Cake
I first tried Hummingbird cake in Walt Disney World in Florida and had never even heard of it. I was totally sold on it after my first mouthful. I used to make this as a cake nearly every week for a local cafe and it was one of their most popular cakes. It is made with bananas and crushed pineapple and is very moist and tasty! French Apple Cake
French apple cake has origins in Normandy and Brittany using locally grown apples evolving from the 14th century. This cake is a delicious but rustic cake, it has simple flavours with a delicate taste of rum to enhance the apple flavour. It has a lot of apples in it and is a simple yet delicious cake. Torchettes
This is another bake from my trip to Lille, France. I bought a bag of these biscuits at a shop near our hotel and they were delicious. Torchettes (or Torchette) are crunchy Breton biscuits from France, specifically created by Maison Georges Larnicol which is the shop I visited in Lille.
