
Lemon Meringue Pie

I think this is one of my favourite desserts as I love the tart lemon topped with the really sweet meringue! I am not sure why it has taken me this long to put this recipe on my blog but I hope it is worth the wait!
It has a crisp shortcrust pastry case filled with tart lemon curd and topped with a delicious crispy on the outside but soft in the middle meringue.

It can be served as it is or with some fresh cream for an extra bit of decadence.
It is a pretty traditional British recipe and a perfect dessert for after Sunday lunch or for a dinner party.
Start by making the pastry - put the flour, sugar and butter into a food processor and pulse until you have fine breadcrumbs. Alternatively rub the butter into the flour and sugar by hand until you have fine breadcrumbs.

Add the egg and combine in the food processor or by hand until the pastry forms a ball.

Wrap in cling film or similar and transfer to fridge to keep cool for at least 1 hour.

Preheat the oven to 180 degrees centigrade (160 fan) or Gas Mark 4.
Remove the pastry from the fridge and on a floured surface roll out the pastry.

Line a round 22cm tart tin with the pastry.

Place in the fridge to cool for at least 30 minutes.
Place some baking parchment and baking beans on top of the pastry tart.

Blind bake the pastry for 20 minutes.
Remove the baking beans and paper and bake for a further 5 minutes.

Filling Put the cornflour, lemon juice, lemon zest, water and sugar in a medium sized pan and heat on medium until it starts to thicken.

Add the butter and whisk until it has melted.

Take off the heat and add the egg yolks, then whisk until incorporated.

Put the pan back on the heat and whisk on a medium heat until it has thickened like curd.

Take off the heat and place the lemon mixture into the baked pastry case and level with a small spatula.

Reduce the oven temperature to 160°C (140°C fan).
Next to make the meringue put the egg whites in the bowl of a stand mixer and whisk until stiff peaks.

Add the caster sugar slowly a tablespoon at a time until it is all combined.

You will have a glossy meringue. The peaks should stand up when the whisk is lifted upwards.

Cover the lemon filling with a 1cm layer of meringue to the edges to ensure a good seal and level.


Place the remaining meringue into a piping bag fitted with a 1A nozzle.

Pipe the meringue around the edges of the tart and then fill in the middle. This can be done with an icing bag or just spoon it on. Use a fork to make the peaks if you are not using a piping bag.

Set aside to cool before serving. It can be kept in the fridge overnight but it is best served on the day it is made.

If you don’t have a piping nozzle you can just spoon the meringue on and make peaks with a fork.
It is nice served on its own or with some fresh cream.
