Condensed Milk Chocolate Chip Cookies

My youngest son asked me if I could make some cookies for him and his friends as they were coming over to our house for his birthday. His friends always request my cookies!!!


So I looked through my notebook and chose one of my new ideas to try out on them. As there is always half a tin of condensed milk left over from making my flapjack I wanted to make some cookies with the rest of the tin so it wasn’t wasted.



So I decided on chocolate chip ones for my sons friends and they were very happy with the outcome and I enjoyed the ONE I managed to eat!


You can freeze the balls of dough and cook when you need them just add a few more minutes to the baking time.



Start by placing the butter, sugar and carnation condensed milk in the bowl of a stand mixer and beat until light and fluffy.




Add the flour, then mix again.



Then add the chocolate chips and mix until fully incorporated.



Place the dough in the fridge to chill for at least 1 hour.



When ready to bake pre-heat the oven to 180°C (160°C fan). Prepare two baking sheets with baking parchment.



Divide the dough into walnut sized balls.



Place some of the dough balls on the baking trays (you will need to do several batches) and press down to flatten slightly.



Bake for 15 minutes.



Leave to cool and set, then transfer to a wire cooling rack.





Condensed Milk Chocolate Chip Cookies

INGREDIENTS

200g unsalted butter, softened

175g caster sugar

150g Carnation condensed milk

325g self raising flour

150g milk chocolate chips


METHOD

  1. Put the butter, sugar and carnation condensed milk in the bowl of a stand mixer and beat until light and fluffy.

  2. Add the flour, then mix again.

  3. Then add the chocolate chips and mix until fully incorporated.

  4. Place the dough in the fridge to chill for at least 1 hour.

  5. When ready to bake pre-heat the oven to 180°C (160°C fan).

  6. Divide the dough into 20 walnut sized balls.

  7. Prepare two baking sheets with baking parchment.

  8. Place some of the dough balls on the baking trays (you will need to do several batches) and press down to flatten slightly.

  9. Bake for 14 minutes.

  10. Leave to cool and set on the baking trays for 10 minutes, then transfer to a wire cooling rack.

You could use any chocolate chips you like in these cookies.


The dough balls can be frozen and cooked as needed - they will take a few minutes more baking time from frozen.


You can use the remaining condensed milk to make my flapjack.
