Strawberry Mousse

This is a really easy but delicious mousse which is perfect for a quick pudding for the summer using delicious fresh strawberries.


It has a layer of strawberry in the bottom and topped with the strawberry mousse.





Start by preparing the strawberries by taking off the stalks and chop roughly.



Place the strawberries in a food processor with the sugar.



Blend until smooth.



Put 2 Tbsp of the strawberry purée in each of the 4 glasses or bowls you wish to use.



Beat the cream in a stand mixer or with a hand mixer until you have stiff peaks.



Fold in the remaining strawberry purée into the cream.



Divide the cream mixture between the glasses and smooth the top.



Place in the fridge for at least 2 hours then just before you are going to eat them decorate the top with fresh strawberries or you can leave plain.

Ingredients:


400g Fresh strawberries

75g Caster sugar

270g Double cream

1tsp Vanilla bean paste


Method:

  1. Prepare the strawberries by taking off the stalks and chop roughly.

  2. Place the strawberries in a food processor with the sugar and blend until smooth.

  3. Put 2 Tbsp of the strawberry purée in each of the 4 glasses or bowls you wish to use.

  4. Beat the cream in a stand mixer or with a hand mixer until you have stiff peaks.

  5. Fold in the remaining strawberry purée into the cream.

  6. Divide the cream mixture between the glasses and smooth the top.

  7. Place in the fridge for at least 2 hours then just before you are going to eat them decorate the top with fresh strawberries or you can leave plain.

You could decorate with chocolate and freeze dried strawberries if you wanted.


This recipe can be used with other soft fruit such as raspberries or blackberries.
