Bakewell Cookies

As most of you will know I love Bakewell Tart and I made Bakewell Flapjack which has been very popular on my blog, so I thought why not a cookie. I wanted to make a cookie which was a bit special so I added icing, almonds and glacé cherries for decoration and decadence.



You can just leave them plain if you like but I wanted them to look like Bakewells. The cookies are crispy round the edges and soft in the middle. They are a delicious treat and perfect with a cuppa.


Start by placing the butter, light brown sugar, granulated sugar and golden syrup in the bowl of a stand mixer.



Beat together until light and fluffy.



Add the egg and almond extract and mix until fully incorporated.




Then add the salt, bicarbonate of soda, baking powder, plain flour and ground almonds. Mix until the dough starts to come together.



Finally add the cherries and mix.




Divide the dough into 9 equal portions and roll into balls, then flatten slightly. Place the balls on a small tray in the freezer and leave for at least 2 hours.



Pre-heat the oven to 200°C (180°C fan) and line two baking trays with baking parchment.


Take the dough balls out of the freezer and place on the baking trays.



Bake for 12-14 minutes until golden brown.



Leave to cool on the trays for 10 minutes then cool completely on a wire cooling rack.



To make the icing place the icing sugar in a small bowl and add the water slowly until you have a smooth icing that you can drizzle.


Drizzle the icing over the cookies, sprinkle over the flaked almonds and add a cherry half in the centre of each cookie.



Leave to set before serving.

You can leave the cookies plain if you prefer.


You can keep the frozen dough balls in the freezer for up to 3 months and cook when you want them. You don’t have to bake them all at once.
