Bakewell Cookies
As most of you will know I love Bakewell Tart and I made Bakewell Flapjack which has been very popular on my blog, so I thought why not a cookie. I wanted to make a cookie which was a bit special so I added icing, almonds and glacé cherries for decoration and decadence. You can just leave them plain if you like but I wanted them to look like Bakewells. The cookies are crispy round the edges and soft in the middle. They are a delicious treat and perfect with a cuppa. Fat Rascals
This is a recipe I have had on my “to-do” list for a while and as the weather was a bit cooler this week I decided to give it a go. Fat Rascals are a cross between a scone and a rock bun and are a great afternoon treat. They originate from Yorkshire and are also popular in the North East of England. Torchettes
This is another bake from my trip to Lille, France. I bought a bag of these biscuits at a shop near our hotel and they were delicious. Torchettes (or Torchette) are crunchy Breton biscuits from France, specifically created by Maison Georges Larnicol which is the shop I visited in Lille. These biscuits are packed with almonds and raisins and topped with a hazelnut. They are really delicious and go well with a nice strong cup of coffee. Jump to recipe Pre-heat the oven to 180°C

Amaretto & Raspberry Trifle
I love a trifle and I was going to make a traditional sherry one but decided as I had a bottle of Amaretto still half full I would use this up instead.
