Halloween Chocolate Cookies


I saw these Reece's pieces chocolates in my local supermarket and thought they would be great to put in cookies for Halloween.


These are a slightly altered version of my chocolate chip cookies with the addition of Reece's pieces.




They are soft in the middle and crunchy around the edges and are nice and chocolatey with the hit of peanuts from the sweets.


To start making these cookies preheat the oven to 180 degrees centigrade (160 fan) Gas mark 4 and line two baking trays with parchment.


In a stand mixer beat the butter, caster sugar and light brown sugar until light and fluffy.



Add the egg and vanilla extract and mix again until incorporated.



Add the flour, cocoa, bicarbonate of soda, baking powder and salt until a soft dough has formed.



Form into 12 equal balls and place on the baking trays. These cookies do spread a lot so don’t place them too closely together. You will need to bake several batches.



Bake for 6 minutes then add a few Reece's pieces on each cookie.


Put them back in the oven and bake again for another 8 minutes.



Transfer to a wire rack after a few minutes to cool completely.




Halloween Chocolate Cookies

Ingredients:


100g Soft Unsalted Butter

75g Caster Sugar

75g Soft Light Brown Sugar

1tsp Vanilla Extract

1 Large Egg

150g Self Raising Flour

25g Cocoa Powder

1/2 tsp Bicarbonate of Soda

1/2 tsp Baking Powder

90g Reece's Pieces


Method:

  1. Preheat oven to 180 degrees centigrade (160 fan) or Gas Mark 4.

  2. Line 2 baking trays with parchment.

  3. In a stand mixer beat the butter, caster sugar and light brown sugar until light and fluffy.

  4. Add the vanilla extract and egg and mix again until incorporated.

  5. Add the flour, cocoa, bicarbonate of soda and baking powder until a soft dough has formed.

  6. Form into 12 equal balls and place on the baking trays. These cookies do spread a lot so don’t put them too close together. You will need to bake several batches as you get 12 cookies from the mix.

  7. Bake for 6 minutes then add the Reece's pieces on each cookie and bake again for another 8 minutes.

  8. Transfer the cookies to a wire rack after a few minutes to cool completely.





Sarah’s extra slice......


You will get 12 cookies from the mix.


You could make these using smarties if you don't like peanuts.

Do not bake longer than 14 minutes the cookies will set as they cool.
